So, I think it’s agreed that our current culture presents a lot of challenges to healthy eating.
Fine, but what can you do about it? Start with one thing. Add one good habit.
If you can only do one thing, start with a seriously healthy breakfast. No, this is NOT another “breakfast is the most important meal of the day” lecture. However, starting your day with a burst of nutrition will:
- help prevent sugar and junk food cravings.
- make it more likely you’ll make better choices throughout the day.
- provide sustained energy.
Since leafy green vegetables have more nutrients per calorie than almost any other foods, they make a fantastic breakfast. Make a huge salad, have a green smoothie or green juice, or enjoy a healthy choice like chia pudding with a green juice or green smoothie on the side.
Many of the nutrients in leafy greens are best absorbed with a bit of fat, so include avocado, coconut oil, homemade dressing with a healthy oil like hempseed oil, nuts, and/or seeds in the meal.

Breakfast “salad” for me most days is leafy greens + vegan protein powder + blueberries + fiber powder. I alternate between spinach, collards, kale and white stemmed chard. Oh, and I add a scoop of green powder just to be extra “green.”
My breakfast is in liquid form. I usually always juice my breakfast. I use cucumber, apple, carrots, lemon or lime, and celery and some days I throw in an orange. If I want something more savory I add bell pepper, jalapeno, a garlic clove or two and beets if I have them and spinach but I prefer making a green smoothie with spinach instead of juicing it.
Plain lettuce salad with avocado, blueberry and apple with light balmic dressing
I enjoy any type of salad for breakfast. If we have leftover salad, I usually eat it the next morning for breakfast.
I can only enjoy a fruit salad for breakfast. Vegetable salads don’t leave me filled for long and fruit gives me the energy I need to start my day. I used to have green smoothies for breakfast but they made me nauseous so I save them for lunch.
Love green smoothies; otherwise, fruit salad is my top breakfast salad choice.

Fave salad? A blended one! This morning I had a green smoothie of kale, coconut milk, and mango. Yum! Actually chewing a “real” salad is too jarring for me early in the morning.
It would be a fruit salad for energy.
