Creamy Sweet Onion Dressing | Raw Food Recipe

Okay. So this probably isn’t a raw food recipe you want to make for a first date.

Though they’re not exactly fresh breath friendly, garlic and onions are two of my favorite flavors. And it doesn’t hurt that they’re both super good for you.

This dressing will keep in the fridge for a few days. If it separates, just give the jar a shake, and pour it on.

CREAMY SWEET ONION DRESSING

The strength of the onion flavor, which mellows with time, will depend on how strong your onion is.

Makes: About 12 ounces

Ingredients:
1/2 medium sweet yellow onion
1/3 cup apple cider vinegar*
1 and1/2 tablespoons raw honey* (or your preferred sweetener)
Dash salt
A few cracks fresh black pepper
1 cup extra-virgin olive oil

What to do:
Put the onion, vinegar, honey, salt, and pepper in the blender, and blend on a medium speed**.
Turn the blender down to low and drizzle in the olive oil, blending just until the dressing emulsifies.

*If you don’t have raw vinegar or honey, regular will do.
**I used a high-speed blender. If you’re using a conventional blender, you may need to chop the onion in small pieces and use higher speeds.

LOL! I’m so with you, pea. Any man who can’t love garlic and onions won’t want to spend too much time around me anyway. I’m sure I have both coming through my pores much of the time!
